Vegan Apple Biscoff Cinnamon Rolls

Biscoff and apples do a nice job to create a compare and contrast of soft bread and crunchy filing. However, they play second fiddle to the cinnamon flavor.

Good news about these cinnamon rolls: Besides the fact that they are vegan, the dessert breakfast bread seems to please all ages. A candy-popping teen to hip late-20 somethings to a friend closer to my young age (wink, wink) declared their affection for my Vegan Apple Biscoff Cinnamon Rolls.

Vegan Mini Chocolate Cream Cakes

Vegan and gluten-free, these luscious chocolate cream cakes rival "regular" chocolate mousse. The crunchy nutty chocolate crust tops it off to make these minis a pièce de résistance. A sliver of Japanese persimmon bathed in a bit of coconut oil, cinnamon and organic brown sugar is a highly recommended garnish.

Peanut Butter Ginger Apple Cookies

A conscious coupling of ginger orange marmalade and peanut butter combine to create a superb balance of yin and yang. The cookie is filled with a Neufchâtel cheese kissed with more ginger orange marmalade and Fuji apple crumbles.

Fluffy chocolate buttercream is an ideal frosting for cake decorators who are health conscious.  Cream cheese, Greek yogurt, unsweetened (ideally organic) cocoa blend with butter and vanilla to create a frosting ideal for piping. Of course, you can simply slather the stuff on any sweet, too! 

The Pocky crumble is a nifty crunch topping. Pocky crumble is a perfect substitute for those who are allergic to nuts.

Vegan Green Tea Cupcakes and Vegan Chocolate Frosting

The matcha green tea flavor boldly steps forward in this dense, moist and wonderful cake. Luxuriously laden with chocolate (all dairy free, gluten free and vegan), no one will ever know this is not a “regular” whipped-creamy sort of chocolate frosting.

Acorn Squash Ramen

Lovely plain with or without additional soy sauce. The acorn squash stands alone in yumminess. Baked for an hour, the acorn squash meat is soft but not mushy. The squash meat also blends well with the not-too-soft, not-too-hard, just right (hello Golidlocks!) ramen noodles, veggies and soy sauce. Scallions add a pleasant bite.

Asian Pear Bread

A distinct Asian nashi pear flavors this bread...The almond Demerara topping is baked golden brown and adds an elegant kind of candy crunch.
